Our matcha
Where does your matcha come from?
Every Matcha Bear matcha comes from Kagoshima, one of Japan’s most celebrated tea-growing regions. Rich volcanic soils, abundant sunshine and a mild climate give a vibrant green tea with natural sweetness, balanced umami and exceptional aroma.
Is it organic?
Yes. All our matcha is certified organic, which means it is grown without synthetic pesticides or fertilisers. Organic farming keeps soils healthier, supports biodiversity and lets the plants develop naturally.
What is the difference between your two grades?
Latte Grade comes from the autumn harvest and is a blend of Saemidori, Yutakamidori and Saeakari. It is fuller-bodied and jet-milled, so it dissolves easily and holds up to milk.
Premium Ceremonial Grade is the first flush of spring, built around the Saemidori cultivar and bead-milled into a much finer powder. Sweeter, silkier and made for whisking on its own.
Why do you keep talking about freshness?
Because matcha starts fading the moment the leaves are ground. Ours is milled close to shipment rather than months ahead, then packed immediately with nitrogen flushing and oxygen-controlled packaging, so the colour, aroma and flavour survive the journey from Japan.
Making it
How much do I use?
Sift about 2 g into a warm bowl, add 60–70 ml of water at roughly 80 °C, and whisk briskly in a zig-zag until a fine foam forms.
Do I need a bamboo whisk?
A chasen gives the best foam and is what the ritual is built around, but you are not stuck without one: a small handheld frother or a sealed jar shaken hard will get you a good cup.
How should I store it?
Airtight, cool and away from light. Matcha is sensitive to oxygen, heat and sunlight.
Can I make a latte with it?
Yes. Latte Grade is built for exactly that – it is bolder, so it still reads as matcha through milk. Ceremonial grade works too, but its finer notes get lost.
